Baked Honey Glazed Carrots Recipe

Ingredients:

-One large bag of carrots trimmed of tops (no need to peel; all the nutrients are in the skin!!), or 7-8 large fat carrots

-Extra virgin olive oil

-1/2 cup of honey

-1/4 cup brown sugar

-1/4 cup chopped parsley or dill

-Salt and pepper to taste

-Parchment paper

-A baking sheet

Directions:

-Heat oven to 450

-Split each carrot in half

-Spread parchment on the baking sheet and place split carrots face down on the parchment; drizzle more oil on top.

-Sprinkle salt and pepper over top

-Bake till fork tender (20-25 minutes).

-Mix together honey and brown sugar.

-Once carrots are “almost“ done, brush carrots on both sides with honey mixture.

-Bake for 10 more minutes

-Sprinkle with chopped herbs.

-Serve and enjoy!
