Strawberry Goat Cheese Crostini

In the summer I love to entertain outdoors. I especially love recipes that require very little cooking or effort. These delicious crostini are bursting with seasonal sweet strawberries, and they come together in about 10 minutes. You might decide to throw a party just to try them! -Juli, Your ALKie Chef

Ingredients:

-1 loaf of French bread/ baguette, sliced

-4 tbsps. Olive oil

-2 cups diced strawberries

-1/4 cup fresh mint or basil, chopped

-6 ounces of goat cheese

-1/4 cup honey

-Reduced balsamic glaze for drizzling

Directions:

-Preheat oven to 400 degrees

-Set goat cheese on the counter while you prepare your other ingredients to allow it to soften for easy spreading.

-Place the baguette slices on a lined baking sheet, and brush with olive oil. Bake for 5-7 minutes.

-While bread is toasting, prep the strawberries by combining the strawberries with the chopped basil or mint. Add a pinch of salt.

-Combine honey with softened goat cheese.

-When your bread is toasted, assemble crostini with a layer of goat cheese and a spoonful of the strawberry mixture.

– Drizzle with balsamic glaze and serve immediately.
