Ingredients:
For the Chicken (or Beef) and Vegetables:
- 2 large boneless, skinless chicken breasts (or substitute 1 1/2 lbs of flank or skirt steak)
- 1 large red onion, thinly sliced
- 1 red bell pepper, sliced in strips
- 1 green pepper, sliced in strips
- Flour tortillas, sour cream, sliced avocado, cilantro, jalapeño slices, and lime slices for serving
Combine Fajita seasoning:
- 2 tsp onion powder
- 1 tsp garlic powder
- 2 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 3/4 tsp salt
Directions:
Preheat the oven to 425F
Season your protein well with the fajita seasoning (set aside)
Spread parchment or foil to cover sheet pan
Arrange onions and peppers evenly on the sheet pan, place protein on top.
Bake until chicken registers 165 F for beef 145F
Remove meat to a plate to rest, and if vegetables are not cooked to your preference, bake more while the chicken/beef rests.
Slice chicken or beef, serve on a platter with the vegetables, have everyone fill their tortilla, and serve with sour cream, avocado, cilantro, jalapeños and a squeeze of lime.
