Asian-inspired Turkey Meatloaf

Meatloaf can be, for lack of a better word, boring. I love this twist on a classic meatloaf. Loaded with flavor and Asian spices, topped with a sweet and spicy glaze, it is meatloaf deliciously reinvented!! I hope you’ll try it! Juli Your Alkie Chef

Ingredients:

2 lbs. ground Turkey

4 cloves garlic/minced

3-4 whole green onions/ diced

2-inch knob of fresh ginger/ground

3 tbsp. soy sauce

1 Tsp. toasted sesame oil

2 large eggs

1 cup breadcrumbs (can be panko) *note that you can add more breadcrumb if it feels too loose.

Glaze

1/2 cup brown sugar

4 tbsps. ketchup

2 tbsp sriracha

1 tbsp rice vinegar

Directions:

Place the ground Turkey in a large bowl along with the green onions, garlic, soy sauce, ginger, and sesame oil. Mix together well.

Add the eggs and breadcrumbs. Mix well to combine. (mixture may feel sticky)

Line a baking sheet with foil and spray with nonstick spray. Preheat the oven to 375 degrees.

Form the mixture into a loaf. While loaf is baking, mix the glaze ingredients in a bowl.

After 30 minutes, spoon half the glaze over top and let bake for an additional 30 mins.

Spoon the remaining glaze and bake for a final 15 minutes.

A meat thermometer should read 160 Fahrenheit
